Our Wines
Grape-growing has been part of our family’s history for five generations, originating in Germany and now, with our family, in Niagara.
Through meticulous caretaking and vineyard management, our grapes are sourced from four special vineyards across Niagara, two are the family’s farms and the other two, the family manages.
Our wines are then crafted in collaboration between Jessica, a recent BSC (Honours) in Oenology and Viticulture graduate from the Cool Climate Oenology and Viticulture Institute at Brock University, and the winemaking team at Collab Wine & Beverage. Our bottles are the result of a family of grape growers and their farming friends’ passion and excitement for local Ontario grapes.
2023 Riesling
Lingard Vineyard, St. David’s Bench, Niagara-on-the-Lake
Our Riesling grapes are sourced from the Lingard Vineyard on the St. David’s Bench, a small ten-acre vineyard – this vineyard benefits from slightly warmer temperatures in spring and a cooler ripening season resulting in robust and flavourful wines. Grapes were harvested on October 24th, 2023 from vines that are 15+ years old. The wine was made in a Pied de Cuve style resulting in a fresh, crisp Riesling that is full of the traditional apple, citrus and tropical notes with nice acidity and subtle sweetness for a balanced mouth-feel.

2023 Sauvignon Blanc
Andrews Vineyard, Four Mile Creek, Niagara-on-the-Lake
Our 2023 Sauvignon Blanc comes from two blocks at the Andrews Vineyard. Most fruit was picked on September 20 from the older block planted in 2012, with a smaller pick two weeks later from the younger block, planted in 2017. The early harvest contributed bright, tropical notes, while the later added ripeness, lower acidity, and roundness—an intentional vineyard decision to support the wine’s style. Grapes were picked at sunrise, then cold-fermented and stored in stainless steel to preserve freshness.
$1.00 CDN from every bottle of Liebling Wines’ Sauvignon Blanc sold is donated to the Walker Family Cancer Centre.

2023 Gamay
Creek Road Vineyard, Four Mile Creek, Niagara-on-the-lake
This is a special vineyard for Ali and Jess as they both witnessed it being planted in 1996, spent many summers working on it, and are now producing a wine from a plot of land that feels like home. Our 2023 Gamay was picked on October 12th, underwent a gentle winemaking process, and aged for nine months in French oak barrels. Medium ruby in colour, notes of cherry, raspberry and vanilla. Medium weight with light acidity, youthful tannins and a smooth finish.

2023 Family Select Gamay
Creek Road Vineyard, Four Mile Creek, Niagara-on-the-lake
Crafted with the same care as our white label Gamay, this wine was harvested on October 12, 2023, and gently fermented with whole and crushed berries. After pressing, it was aged for 18 months in two pre-loved barrels that stood out from the start—and only grew better with time. A happy surprise of winemaking, bottled for you. Only 40 cases made.

2023 Cabernet Franc
Oppenlaender Vineyard, Four Mile Creek, Niagara-on-the-lake
This small vineyard is where the Oppenlaender family call home. The vineyard and barn have been the backdrop of many celebrations and we knew our Cabernet Franc would be from this vineyard. For 2023, we harvested the grapes on November 16th, 2023, and once at the winery the grapes were lightly crushed and fermented in bins. Punchdowns were carried out daily until pressing, after spending three weeks in contact with the grape skins and seeds. The wine was aged for 20 months in French oak barrels (3 pre-loved barrels, and 1 new) before blending and bottling. This is a medium-bodied Cabernet Franc with notes of raspberry, cherry, vanilla, and pepper.

2022 Family Select Cabernet Franc
Oppenlaender Vineyard, Four Mile Creek, Niagara-on-the-lake
A happy surprise! The 2022 Family Select Cabernet Franc received the same care as our white-label Cabernet Franc, with the only difference being the barrel that it was aged in. Little did we know that this single barrel, which had been used just once before, would create such a distinctive character compared to the others. The difference was so remarkable that we decided to bottle this wine separately as our Family Select. This Cabernet Franc is concentrated in flavour, with notes of ripe berries, floral, savoury undertones, and plush tannins. Only 18 cases produced.
